Radish leaf soup recipe

Ingredients

  • 2 handfuls of fresh radish leaves, thoroughly washed and chopped
  • 1 medium onion, diced
  • 2 cloves of garlic, crushed or finely chopped
  • 2 medium potatoes, peeled and diced
  • 1 liter of vegetable broth
  • 2 tablespoons of olive oil or butter
  • Salt and freshly ground black pepper to taste

Procedure

  1. Heat the olive oil or butter in a medium-sized skillet or soup pot. Add the chopped onion and fry gently until soft and translucent, about 3-5 minutes. Add the garlic and cook for another 1-2 minutes until fragrant.
